Hot Honey BBQ Quesadillas are crispy, cheesy, sweet, and spicy with bold barbecue flavor balanced by hot honey. They’re quick to make and perfect for weeknight dinners, snacks, or party food, using simple ingredients and a skillet.
Ingredients
For the Filling

2 cups cooked chicken, shredded or chopped

½ cup barbecue sauce

2–3 Tbsp hot honey (adjust to taste)

1½ cups shredded mozzarella cheese

1 cup shredded cheddar or Monterey Jack cheese

½ tsp smoked paprika

½ tsp garlic powder

Salt and black pepper, to taste
For the Quesadillas

4 large flour tortillas
-
1–2 Tbsp butter or olive oil (for cooking)
Optional Add-Ins & Toppings

Red onion, thinly sliced

Jalapeños

Fresh cilantro

Ranch or sour cream (for dipping)
Instructions
1. Prepare the Filling

In a bowl, mix the cooked chicken with barbecue sauce and hot honey.

Season with smoked paprika, garlic powder, salt, and pepper.
2. Assemble the Quesadillas

Lay tortillas flat.

Sprinkle cheese evenly over one half of each tortilla.

Spoon BBQ chicken mixture over the cheese.

Add extra cheese on top, then fold tortillas in half.
3. Cook

Heat a skillet over medium heat and lightly grease with butter or oil.

Cook quesadillas for 2–3 minutes per side, until golden brown and crispy and the cheese is fully melted.
4. Serve

Remove from skillet, let rest 1 minute, then slice into wedges.

Drizzle with extra hot honey if desired.
